What's for Dinner? Creamy Vegetable Soup


This recipe was given to me by a good friend a several years ago... and it continues to be a family favorite around here!  We especially love it on a cold Sunday night, with homemade bread.

3 to 4 cubed potatoes
1 large onion, diced
1 stalk broccoli chopped
1 large carrot, grated or chopped
2 stalks celery, chopped
3 cups water
3 to 4 chicken bullion cubes 
2 cups grated cheese
1 tsp salt
1/4 tsp pepper
3/4 cup butter
3/4 cup flour
1 qt milk

Put vegetables, water, and bullion in a stockpot.  Simmer until tender.  Put butter in a bowl and melt in the microwave.  Whisk in flour, and microwave 2 minutes until it bubbles.  Add milk slowly.  Continue cooking and stirring one minute at a time, until mixture thickens.  Add milk mixture to vegetables and simmer 10 minutes.  Add cheese, salt, and pepper.  Simmer until cheese is melted and serve.
